My dear friend Risa asked me a while back for a muffin recipe that was easy, healthy, and delicious. These muffins were one of the first recipes I ever tried, and they’ve come out perfect every time. They’re so simple and good for you…and particularly tasty warmed up, topped with a bit of Earth Balance and jam…mmmm.
Since the goal is simplicity, straight on to the recipe (not sure where it originated, but it’s all over the internet as Gibb’s Oat Bran Muffins – anyone know who Gibbs is?)
What you’ll need:

2 1/4 cups oat bran

1 tablespoon baking powder

2 tablespoons chopped almonds

1/4 cup maple syrup or agave
Handful blueberries (or raisins…shredded coconut…)
Handful of dry oats (optional)
2 large mixing bowls, whisk, 12-muffin tin, muffins papers or non-stick spray, something to scoop batter into muffin tin (I use a ladle)
What you’ll do:
Preheat to 450°F. Combine dry ingredients in a mixing bowl.
Blend wet ingredients together.
Mix wet gently with dry.
Distribute batter evenly in the muffin tray.
Sprinkle dry oats on top.
Bake muffins for 12 minutes and check for doneness with a toothpick; if it doesn’t come out dry, give them another few minutes.
Serve…with some almond milk, perhaps?
